I had such a nice weekend this past weekend! I went to Palm Springs with a friend of mine (who also has a baby the same age as Charlie) and we had the most relaxing mommy weekend. Lounged by the pool pretty much all day, got massages, had drink and dinner, went dancing and still made it to bed by 11pm. Now that is what I call a successful weekend! Oh, and I can’t forget the outlets. I know this isn’t news to a lot of people that live in SoCal however, if you go to Palm Springs you must go to the outlets! Desert Hills Premium Outlets is where we went and it was my dream. haha
Anyways, let’s talk food. This creamy garlic shrimp pasta is so yummy! It’s exactly what it says… creamy and garlicky and filled with yummy shrimp! The whole dish is quick to throw together and is a crowd pleaser. It’s one of those dishes that seems more impressive and difficult than it is. Done in under 30 minutes! Pair it with a nice bottle of white and you’re in business.
Creamy Garlic Shrimp Pasta
Ingredients
- 1 box fettuccine noodles
- 1 lb shrimp, peeled, deveined and tails removed
- 2 tbsp olive oil
- salt and pepper
- 2 tbsp butter
- 1 tbsp garlic, minced
- 2 tbsp marsala wine
- 1 1/2 cups heavy cream
- 1 tsp Italian seasoning
- 1/2 cup grated parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil. Once boiling, add the noodles and cook following instructions on the box.
- Heat olive oil in large skillet over medium high heat. Once it's shimmering, add the shrimp. Sprinkle with salt and pepper. Sear on each side until pink and cooked through, about 2-3 minutes per side. Remove from skillet.
- To the same skillet, add the butter and garlic. Cook until fragrant, about 1 minute. Add marsala wine and stir, let cook for a minute. Then add in heavy cream, Italian seasoning and parmesan cheese. Stir sauce and bring to a simmer. Then reduce heat to medium and keep stirring until slightly thickened. Return shrimp to the skillet, I like to use a slotted spoon to do this. Give it a toss.
- Add the pasta to the sauce a little at a time, stirring to incorporate. Garnish with fresh parsley and serve. Enjoy!
