I hope you all had a nice weekend! It was a busy one for us…we had a double date on Friday and then I had a friends birthday on Saturday. Both nights I got home after 10:00pm. Not lying when I say my voice was scratchy and I felt exhausted on Sunday. That’s how you know you’re getting old. 😂
Anyways, when Sunday came I was ready for an easy recipe. So lasagne it was for #EasyMondays!
This recipe is easy and so delicious you guys… I mean, what can really be better than layers of noodles with lots of melty cheese and a slightly spicy, slightly sweet meat sauce? Not much. Comfort in a 9×13 dish. *chefs kiss*
I like to use a mix of spicy ground Italian sausage and ground beef. It just adds that extra kick that takes a normal all beef lasagna to the next level.

Ingredients
- 1 lb ground spicy Italian sausage can use mild if you prefer
- 1 lb ground beef 90/10 is the best ratio for this recipe
- 1 small white onion, diced
- 3 cloves garlic, minced
- 1 28 oz can crushed tomatoes
- 2 6 oz cans of tomato paste
- 2 6.5 oz cans of tomato sauce
- 1/2 cup water
- 3 tbsp sugar
- 1 1/2 tsp dried basil
- 1 tsp Italian seasoning
- 1 tsp dried parsley
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp salt
- 1/2 tsp pepper
- 12 lasagna noodles
- 1 16 oz container of ricotta cheese
- 1 egg
- 1 bag of shredded mozzarella
- 3/4 cup grated parmesan
Instructions
- In a large pot with a heavy bottom, brown the sausage, beef and onion. Cook until nicely browned. Then add in the crushed tomatoes, tomato paste, tomato sauce, water, sugar, basil, Italian seasoning, parsley, crushed red pepper, salt and pepper. Let cook for about 30 minutes to combine all the flavors. Stir occasionally.
- While that's cooking, bring a large pot of salted water to a boil. Cook noodles until pretty al dente (they continue to cook in the oven) then drain and rise with cold water. Preheat oven to 375°.
- In a small bowl, combine the ricotta cheese, egg and season with a little salt and pepper.
- Assemble lasagna! In a greased 9x13 dish, ladle a layer of meat sauce. Then top with lasagna noodles. I do 3 horizontal and one perpendicular on the end. Layer half of the ricotta mix on top of the noodles and then sprinkle with 1/3 of the mozzarella. Ladle more meat sauce and repeat those steps. Ending with sauce on top. Then you'll sprinkle the remaining mozzarella on top and sprinkle with the parmesan cheese.
- Cover with foil (spray inside of foil with nonstick spray to prevent the cheese from sticking) and bake for 25 minutes. Then remove the foil and bake another 25 minutes. Let rest for 10-15 before serving. Enjoy!
