School parties, bday parties etc. There are lots of reasons for a healthier treat. These healthier chocolate muffins are easy to throw together and don’t sacrifice flavor!
They are rich, chocolatey and moist. Exactly what I want from a chocolate muffin. The monk fruit sweetener has a lower glycemic index (zero!) and is a pretty even swap 1/1 for white table sugar. If you’d like to try it with all monk fruit sweetener you can however the texture will come out a little different. Not quite as soft but will still taste yummy!

Healthier Chocolate Muffins
Ingredients
- 1 2/3 cup flour
- 1/2 cup white sugar
- 1/2 cup monk fruit sweetener (can use 1 cup if you don't want to use any white sugar)
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup cocoa powder
- 1/2 cup very hot water
- 1/2 cup avocado oil
- 1 cup sour cream
- 2 eggs lightly beaten
- 1 1/2 tsp vanilla extract
- 2 cups chocolate chips, use 1 cup of milk chocolate chips and the other cup can be whatever you like, plus more for topping.
Instructions
- Preheat oven to 375°. Line a muffin tin with liners and/or spray a mini muffin tin.
- In a large bowl whisk flour, sugars, baking soda and salt.
- In a separate bowl pour the cocoa in. Add the hot water to cocoa and whisk until smooth. Add oil and mix, then add eggs and vanilla. Whisk to combine. Add wet to dry ingredients and fold in chocolate chips. Fill muffin tins 2/3 of the way full. Top with more chocolate chips and bake 17-18 minutes unitl toothpick comes out with a few moist crumbs. If making mini muffins, bake 10-11 minutes until toothpick comes out with a few moist crumbs. Enjoy!
