Who doesn’t love a good dip? I’m sharing this easy beef queso dip that is quick and highly addicting. It will be a hit at your next party!
I’m not gonna lie, I judge Texmex restaurants based on their queso. If it’s good, you know you’re gonna get a good meal. If not, well, that sucks. I grew up eating Velveeta (hello Midwest cooking) in lots of recipes and while I’ve steered away from it a bit as an adult, there are certain recipes that just call for it. Queso dip is one of them my friends.
This recipe obviously has lots of cheese. Velveeta and freshly grated cheddar cheese. Sure, you can use the pre-shredded bag of cheese but it doesn’t melt as nicely as when you do it yourself. Resulting in a not as creamy and smooth dip. So if you can, grab a block and grate it yourself. My recipe calls for mustard powder and while that might sound weird, I can assure you it doesn’t shine through. It’s more of an ingredient that helps the other flavors shine. A little umami if you will. Makes you say wowza that’s good when you take a bite. If you don’t have it on hand or don’t want to go buy it, you can skip it. If you have it, you know what to do. I also opted for separate cans of diced tomatoes and green chiles as a way to add more chunky pieces of tomato and less sodium. If you don’t have these and don’t want to go buy them, you can also use a can of Rotel. Let’s get to it.

Easy Beef Queso Dip
Ingredients
- 1 lb ground beef
- 1/2 onion, diced
- 2 1/2 tbsp taco seasoning
- 1/8 tsp mustard powder
- 8 oz Velveeta cheese
- 2 cups freshly grated sharp cheddar cheese
- 10 oz diced tomatoes, drained well
- 4 oz can diced green chiles
- 1/2 cup milk
Instructions
- In a large skillet over medium heat, add ground beef and onion. Cook until meat is no longer pink and slightly browned. Add taco seasoning and mustard powder. Cook for another minute. Add Velveeta, shredded cheddar cheese, tomatoes, and green chiles. Cook until cheese is melted about halfway then add the milk. Stirring over the heat until fully melted and smooth. Serve with tortilla chips. Enjoy!
