If you’re from the Midwest, chances are you have heard of scotcheroos. If you live elsewhere, let me be the one to introduce you to my chewy scotcheroos!
These are a classic Midwestern treat. Rice Krispies, peanut butter, chocolate and butterscotch come together to make a truly decadent, chewy and delicious dessert bar. As I said, they are chewy and so fricking good. Just trust me, you need to make these for your next get together whether that’s for the Superbowl, a galentine’s day brunch or a birthday party. These will be a hit!

Chewy Scotcheroos
Ingredients
- 6 cups rice krispies
- 1 cup sugar
- 1 1/3 cup light corn syrup
- 1 1/3 cup creamy peanut butter
- 1 1/2 tsp vanilla extract
- 1 cup chocolate chips
- 1 cup butterscotch chips
Instructions
- Spray a 9x13 with nonstick spray and line with parchment paper.
- In a large saucepan over low heat, combine sugar, corn syrup. Heat and stir until sugar dissolves and it's really liquidated. You don't want it to simmer or boil as that will make them hard. So watch it closely and keep stirring. Should take about 4 minutes. Then stir in peanut butter and vanilla until combined and smooth.
- Add the rice krispies and carefully fold in, trying not to crush all the rice krispies. Transfer to prepared dish and press down.
- In a microwave safe bowl, melt chocolate chips and butterscotch chips in 15 second intervals until melted. Stirring after every 15 seconds. Spread over rice krispies and let cool at room temp or put in fridge until chocolate has firmed up. Enjoy!
