I was brainstorming recipes to make for my cookie swap and knew I wanted to do something with hot chocolate. I’d seen hot chocolate marshmallow cookies before which yes, are yummy. But I thought a peppermint swap could make them really good. Turned out, I was right.
Imagine a warm cup of rich hot chocolate with a lovely peppermint flavor baked up in a chewy cookie. Sounds pretty good, right? Not gonna lie, it also reminds me of my all time fave peppermint mocha from the bucks. The end result is a thin yet chewy and soft cookie. Really delicious! This is a really simple cookie to throw together and I’m sure you will love it.

Hot Chocolate Mint Cookies
Ingredients
- 1 cup unsalted butter, softended
- 1 cup sugar
- 2/3 cup light brown sugar, packed
- 2 eggs
- 1 tsp vanilla
- 1/2 tsp peppermint extract
- 3 1/4 cup flour
- 4 package hot cocoa mix (don't use sugar free)
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp baking powder
- 1 1/2 cup Andes baking bits
Instructions
- In the bowl of a stand mixer, add the butter, white sugar and brown sugar. Beat on medium/high until light and fluffy, about 2 minutes. Add eggs, vanilla and peppermint extract, mix to incorporate.
- In a large separate bowl, combine dry ingredients. Gradually beat into butter mixture until well blended. Stir in Andes bits. Cover and chill dough for 30 minutes.
- Preheat oven to 350° and line baking sheets with parchment paper. Scoop out 2 tbsp of dough and gently round it in the palms of your hands. Place 2 inches apart on baking sheet. Bake 9-11 minutes until edges are lightly browning. Cool on sheets for 5 minutes then transfer to a wire rack. Enjoy!
