Don’t you just love a good salad? There is something about a crunchy, fresh and bright salad that compliments any meal. This one has loads of veggies and can really be personalized with whatever ingredients you have on hand! Asparagus would make a nice addition, you could use white beans instead of garbanzo beans, add some bell peppers etc. Use what you have! Just make sure to include fresh lettuce, some crunchy veggies like radishes and carrots, then some soft toppings like avocado or beans.
A tip for salads: Leave the dressing on the side! It allows each person to dress it to their liking and allows you to actually keep the leftovers! I’ve tried to keep leftover salad before but the dressing always makes it soggy. I know I’m not alone in that one. If you don’t dress it, you won’t have this problem!

Fresh Spring Salad with Citrus Vinaigrette
Ingredients
- 8 cups butter lettuce or mixed greens
- 1 cup peas, I like using frozen and then a quick blanche on the stove
- 2 large carrots, peeled and sliced into thin rounds
- 6 radishes, sliced into rounds
- 3/4 cup garbanzo beans
- 1/2 large avocado, diced use a whole avocado if small
- 1/2 cup roughly chopped fresh mint leaves
- 1/2 cup roughly chopped basil leaves
- 1/2 cup crumbled feta cheese
Citrus vinaigrette
- 3/4 cup good olive oil
- 1 small lemon, juiced about 3 tbsp of juice
- 1/4 cup white wine vinegar
- 1/2 orange, juiced about 2 tbsp
- 1 smal shallot, finely chopped
- salt and pepper
Instructions
- Combine all salad ingredients in a bowl and give a toss.
- Put all of the vinaigrette ingredients in a mason jar and shake until combined.
- Serve and enjoy!
