Do I really need to say more? Maple. Pecan. Oatmeal. Muffins.
My first recipe for fall 2019. First of all, maple and pecan are a match made in heaven. Add some oatmeal in the mix and you’re keeping it healthy. It’s basically a salad. Right? Okay, not quite. But these muffins are high in fiber and antioxidants thanks to the oatmeal!
These maple pecan oatmeal muffins are hearty, filled with fall flavors and have a great crunch thanks to the pecans. They are screaming my name at the moment because I’m sitting here with my cup of coffee and my stomach is starting to growl. Knowing I have a big pan of them in my kitchen makes it hard to resist.

Maple Pecan Oatmeal Muffins
Maple Pecan Oatmeal Muffins
Ingredients
- 2 cups flour
- 1 cup oats, pulsed in a food processor
- 3/4 cup packed brown sugar
- 3 tsp baking powder
- 1/2 tsp cinnamon
- pinch of salt
- 1 cup milk
- 1/2 cup melted butter
- 1/2 cup maple syrup
- 2 large eggs
- 1/2 tsp vanilla
- 1/4 cup greek yogurt
- 3/4 cup chopped pecans
Crumble topping
- 3 tbsp cold butter, cut into small pieces
- 2 tbsp oats
- 2 tbsp flour
- 1/4 cup brown sugar
Icing
- 1 cup powdered sugar + 2 tbsp
- 2 tbsp maple syrup
- 1 tbsp milk
Instructions
- Preheat oven to 400° and prepare a cupcake pan. Either line with paper cups or spray.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, cinnamon and salt. In a separate bowl, combine the milk, melted butter, maple syrup, eggs, vanilla and greek yogurt. Add the wet ingredients to the dry and mix until just combined. Fold in the chopped pecans.
- In a separate small bowl, make the crumble topping. Use your hands to combine the small pieces of butter, flour, brown sugar and oats. Break apart into small pieces.
- Fill the muffin tins 3/4 of the way full with the muffin batter. Then top with the crumble topping. Bake for 15 minutes or until toothpick comes out clean.
- Remove the muffins from the pan when they come out of the oven and transfer to a wire cooling rack. Let cool on rack for 10 minutes.
- Combine the icing ingredients in small bowl and drizzle over the muffins using a spoon.
