Yes, I am aware that it’s not currently peach season. But how can a girl resist a juicy, ripe peach at Whole Foods? I went shopping today and stopped in my tracks when I saw them. They are prime right now so get some! This peach and burrata salad with tomatoes and greens is so simple! It’s done in 10 minutes and only has 6 ingredients. Can I get a “hell yes?!” Perfect for #easymondays and truly so yummy. Makes a fabulous salad for dinner parties as it’s so pretty and colorful. Also it’s bursting with sweet peach flavor, tangy balsamic and smooth, creamy burrata. Hungry yet? Let’s do it.
Peach and Burrata Salad with Tomatoes and Greens
Ingredients
- 3 large peaches, cut into wedges and then cut in half
- 1 16 oz container of burrata
- 2 large tomatoes, cut into wedges
- 2-3 tbsp good aged balsamic
- 2 cups greens, I used spinach and dandelion
- 3 large basil leaves, sliced
Instructions
- On a serving platter, scatter your greens to cover the bottom. Drop your peach cubes and tomato wedges across the top. Using a melon baller, drop balls of burrata on the top. Drizzle with the balsamic and sprinkle with basil leaves.
You can use a balsamic reduction, of course! (That’s what makes the vinegar sweet.) However, in Italy, they don’t do that. They age their balsamic to give it a sweet, syrupy consistency. So, pick out a nice aged balsamic at the store. Whole Foods has a nice selection.
The only bummer for me, well– not really a bummer but you know, kinda– is that my husband doesn’t like tomatoes or peaches. So, I’m left to eat this all by myself right now. Like I said, not really a bummer but, kinda. haha I guess this is my dinner! Have a great Monday!
