I went on a boat ride yesterday with a couple of my girlfriends and brought along an assortment of goodies to munch on! Of course, had to bring a bomb cheese board as well as wine (duh) but I had also just made chocolate chip cookies so I figured I’d share the fatness and bring them along. They were a hit!
When I think of a good chocolate chip cookie, I think: soft, chewy, not too much or too little chocolate and a rich, buttery flavor. Well folks, look no further. I have the perfect chocolate chip cookie to check all those things off the list. Behold…
Chewy Chocolate Chip Cookies
Ingredients
Ingredients:
- 2 1/4 cups flour
- 1/2 tsp baking soda
- 1 cup butter softened to room temp (2 sticks)
- 1/2 cup sugar
- 1 cup packed brown sugar can use coconut sugar as a substitute!
- 2 tsp vanilla extract
- 2 large eggs
- 2 cups milk chocolate chips
Instructions
Directions:
- Preheat oven to 350 degrees.
- In a small bowl, whisk your flour and baking soda together to combine. Set aside.
- In a stand mixer using the paddle attachment on medium speed, beat the butter and both sugars together until light and fluffy. Reduce speed to low and add the vanilla and eggs. Beat until well combined.
- With the mixer on low, add the flour mixture a little at a time until just combined. Add the chocolate chips on low speed.
- Drop the dough by spoonfuls onto a baking sheet and bake for 8-9 minutes until the edges are just golden brown. Don't overcook! We want them soft and chewy. When you take them out of the oven, let rest on the baking sheet for a minute before moving them to a cooling rack.
