I have always loved the 4th of July. It’s such an American summer staple celebration. Desserts are also something I’ve always loved. I remember the first time I had dessert fruit pizza was over at my friend Deanne’s house. (Hey girl if you’re reading this!) I remember thinking, a giant sugar cookie with cream cheese frosting and colorful fruit?! Yes, please!
This is exactly that and couldn’t be easier! You could even use a refrigerated cookie dough if you so choose. But like, might as well make it homemade when it’s this easy, right?
Dessert Fruit Pizza
Ingredients for the sugar cookie crust:
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup sugar
- 1 large egg, at room temperature
- 1 generous teaspoon of vanilla extract
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons corn starch
Ingredients for topping:
- 1 8oz package of cream cheese, softened to room temperature
- 2 cups powdered sugar, sifted
- 1/4 cup unsalted butter, at room temperature
- 1 tablespoon milk or cream
- 1 teaspoon vanilla extract
- squeeze of half a lemon
Directions:
- Make the crust. In a stand mixer using the paddle attachment, beat the softened butter on medium for about a minute. Then add in the sugar and beat until fluffy. Next, beat in the vanilla and egg. Scrape down the sides when needed!
- In medium bowl. whisk the flour, salt, baking powder, baking soda and corn starch together. Slowly add the dry mixture to the wet mixture. Cover tightly and refrigerate for at least 30 minutes or up to one day.
- Preheat oven to 350 degrees. You can use a pizza pan if you have one (I don’t…surprising, I know) and if not, just use a regular cookie sheet lined with parchment paper. Take the dough out of the fridge and press it into a circle to look like pizza dough. Bake for 18-22 minutes until edges are just browning. Allow crust to cool completely before icing and decorating. You can put in the fridge if you are in a rush!
- While it’s cooling, make your frosting. Combine cream cheese, powdered sugar, butter, milk, vanilla and lemon juice in a medium bowl. Use a hand mixer on medium until smooth and creamy, about 2 minutes. Frost the crust and decorate with sliced fruit. It stores well in the fridge for up to 3 days.
Easy as pie. But it’s not pie. It’s a cookie that looks like a pizza pie. (See what I did there?)
