Happy Monday, darlings!
A couple weeks ago I was thinking, “Man, I need to make some little bites that are healthy, quick and full of good stuff for me.” Then the googling began. I found a recipe by Minimalist Baker and gave it try. I’ve altered it now to make it my own and it is so good!
My recipe is so quick and easy. It completely fulfills a sweet tooth craving while giving you lots of natural energy and antioxidants.
Mango Bites
Ingredients:
- 1 1/4 cup raw cashews or walnuts (I did 1 cup cashews and 1/4 red walnuts)
- 6 oz dried, unsweetened mango (about 1 cup if firmly packed)
- 10 pitted dates
- 2 tablespoons hemp seeds
- 1 tablespoon chia seeds
- 1/3 cup unsweetened, finely shredded coconut, plus more for rolling
- 1/2 lime, squeezed
Directions:
- Put the dried mango in a bowl and fully cover the mango with hot water. Let sit for 5-7 minutes. Take out of water and place between two rows of paper towels to remove the water. Note* This step is very important as the mango won’t break down well in a food processor unless it’s softened.
- Add nuts to a food processor and pulse until a fine meal forms. Remove from processor and put in bowl. Set aside.
- Add softened mango and dates to food processor and pulse until a sticky dough forms.
- Add the nut meal, hemp seeds, chia seeds, shredded coconut and lime juice to the mango and date mixture. Pulse to combine.
- Scoop out spoonfuls of the mixture and roll into little balls in your palms. Then roll around in a bowl of shredded coconut till coated.
- These last in the fridge for up to a week! Good luck making them last that long, though!
