Does anyone celebrate St. Patricks Day? I used to do the whole bar crawl thing where you dress up in the most ridiculous green outfit you can find and make the rounds to the best bars offering beer specials. Those days have passed for me. However, I do love being festive af when I can. Even for the small holidays! So, I’m dishing up some yummy green recipes for you loves.
Usually you think, corned beef and cabbage and super fattening shepards pie. I chose non-traditional recipes to share with you that can be made year round. The best part? They are really simple. This first one is a recipe that anyone can do and it has so much flavor! It’s slightly different than traditional pesto because it’s more about the spinach and less about the basil; it also swaps the pine nuts for almonds. It’s light and fresh with the lemon!
Spinah Pesto Pasta
Ingredients
Ingredients:
- 1 lb pasta
- 2 tbsp roasted almonds
- 1 small clove of garlic
- the zest of 1 small lemon plus a little squeeze of the juice
- 4 cups baby spinach approximately 4 handfuls
- 2 1/2 tbsp olive oil
- 3 tsbp of freshly grated parmesan cheese
- 3 fresh basil leaves
- salt and pepper to taste
Instructions
Directions:
- Cook pasta and reserve 1/2 cup cooking water. Drain and set aside.
- In a food processor, pulse the almonds, garlic and lemon zest and juice until finely chopped. Add spinach, olive oil, parmesan, basil leaves, salt and pepper. Puree until smooth, scraping down sides.
- Toss pasta with the pesto, adding some of the cooking water if it's a little dry. I added about 1/4 cup of liquid.
If you wanna make it a little heartier, feel free to add more parmesan. Also, adding some chicken to this would be delicious.
Super simple and yummy. I love recipes that squeeze in veggies, too. It makes me feel like I’m a real adult. Is that weird? Maybe. But you feel me.
