Happy Friday before Christmas, darlings!
I hope all of you guys are getting excited for Christmas. I know I am! One thing my family always does is have a big breakfast on Christmas day. My grandma usually makes some breakfast casseroles…an egg based one and a sweet one.
If you guys remember back to my instagram stories, I had showed you my seasonal haul from Trader Joe’s. I said I was going to experiment with the things I found. Well, I did. They have this sugar plum jam right now that is so yummy! The perfect mix of sweet and tart and it pairs perfectly in this recipe.
Sugar Plum Stuffed French Toast Casserole
Ingredients:
- 12 1 inch slices of brioche bread
- 1 8oz package of cream cheese, softened
- 3/4 cup sugar plum jam (can substitute for other flavor)
- 1 dozen eggs
- 2 cups milk, I used 2%
- 1/3 cup maple syrup
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon ground cinnamon
Directions:
- Mix the softened cream cheese with the sugar plum jam until combined. Mixture will be clumpy.
- Arrange 6 pieces of brioche in the bottom of a 9×13 greased pan.
- Spread the cream cheese and jam mixture on each piece of brioche. Be generous!
- Top with remaining bread pieces.
- In a large bowl combine the eggs, milk, maple syrup, vanilla and cinnamon; pour over bread. Gently press the bread down to help absorb the egg mixture. Cover and refrigerate overnight.
- Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 degrees for 50 minutes until lightly browned and thermometer reads 160 degrees.
- Top with maple syrup.
I hope you guys like this as much as I do. It makes the house smell like sugar plums and is so filling! It’s absolutely perfect for your Christmas morning. If we were home this year (rather than in New York) I would definitely be making it…again. haha! The fun thing about making recipes for you guys is all of the experimenting and taste testing. I’m not complaining 🙂
