When it comes to soups, I am a true lover. I love a good soup. I love when a soup makes my nose run. I love the warm and cozy feeling it gives my belly and I love dipping crusty bread into broth based soups to soak up all the goodness. I just love them.
This 30 minute spicy pozole recipe has been a recurring soup in my household for going on 4 years now. I make it every Fall and Winter and am honestly very surprised I haven’t shared it until now. It’s full of flavor and goodness and has just the right amount of heat. I like to cool mine down by adding a dollop of sour cream right into my bowl and giving it a stir. The best thing is, it really is done in just 30 minutes.
This soup does have a kick to it, so if you don’t like spice, I recommend either taking away the cayenne or making it less. You can always add more!

30 Minute Pozole
Ingredients
- 1 small yellow onion, diced
- 2 tbsp oil
- 2 tbsp flour
- 3 tbsp chili powder
- 3 oz tomato paste
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp cayenne
- 1/2 tsp salt
- 2 cups water
- 4 cups chicken broth
- 4 oz can chopped green chiles
- 15 oz hominy, one large can, drained
- 1 rotisserie chicken, shredded
- 1 lime
- 1/2 bunch of cilantro
Instructions
- In a large pot over medium heat, sauté the onion in the oil until softened. About 3 minutes. Then stir in the flour and chili powder and continue to cook for another 2 minutes. Stirring to prevent burning.
- Add in the water, tomato paste, cumin, garlic, cayenne, salt and pepper. Stir to combine until paste has broken up and dissolved. Let simmer and thicken for about 3-5 minutes.
- Add in chicken broth, shredded meat, diced chiles, squeeze of half a lime, 1/2 of the cilantro and hominy. Stir to combine and let simmer for 10 minutes or so to combine all the flavors. Serve immediately and top with lime wedges, sour cream, fresh cilantro and avocado if you want.
This is very good and full of flavor. If you can stop and get a rotisserie chicken on the way home from work, this is a fabulous way to dress it up and make a yummy homemade dish out of it. As always, tag me if you make it @Tessa_Port.
